Receive TCS food and reject an out-of-temp delivery

Practice the FDA Food Code 3-202.11 receiving order. An out-of-temp TCS delivery is not signed in to recover later in the walk-in.

1. Meet the driver and check the truck condition.
2. Check product packaging and dates.
3. Probe TCS items in the thickest part.
4. Accept cold TCS only at 41°F or below, unless a listed exception applies.
5. Accept hot TCS only at 135°F or above.
6. Reject any TCS item that is out of temperature.
7. Reject damaged, swollen, or leaking packaging.
8. Move accepted TCS to cold or hot holding immediately.
9. Do not sign a credit later in place of a same-time rejection.
